There is nothing wrong with the traditional approach to making tea provided you have enough time on your hands to get everything just right, exemplary powers of concentration and the cleanest of palates to detect all the nuances of the tea leaf without the influence of milk and sugar.
Reality is a little different. For most of us a cup of tea is something wet, brown and hopefully enjoyable and recognisable as tea.
The importance of convenience has meant that the tea bag has become the norm for a cup of tea and it is a poor flavourless imitation of the real thing. The brewing temperature is always less than ideal for a full extraction and this means the steeping time has to be extended and is often never enough. In fact the brewing temperature of teabag tea is around 30ºC or 60ºF lower than the temperature at which boiling water is poured over the tea in a TEA-CHA’s PET.

By suspending the tea leaves over a very small filter and pouring boiling water directly onto them at a higher temperature than with a tea bag, a much more complete and full extraction is assured. The boiling water filters through the tea completely – no water can flow out the sides without contact with the tea leaves.
